We don't want to squash your hopes, but by now even the most stubborn of us have to admit that summer is over and autumn has taken it's place. With Halloween just around the corner and copious amounts of Pumpkin Spiced Lattes being consumed, there is no denying that the new season is already in full swing. So to celebrate the changing leaves (and temperature!) we have brought you 15 recipes using everyone's favourite fall vegetable that will make the transition into the colder days much, much more enjoyable.
1. Starting off with a classic that we are sure most of you have had before - butternut squash soup. However this recipe for a Butternut Squash + Coconut Soup from Set the Table is with a twist- veering off the traditional version by introducing some Thai flavours into the mix.

3. Keeping with the Italian theme, this Butternut Squash and Sage Lasagna by Martha Stewart is absolutely fantastic. It is bound to warm you up during this fall and will make any guest feel at home :)
4. Another great find on Martha's website is this recipe for Twice Baked Butternut Squash that is really easy to make and is a great addition to a festive meal. Left overs are a great office lunch as well.
5. Speaking of side dishes, be sure to give this Pumpkin Sage Polenta by Kitchen Confidante a try this season! It sounds so good you could even have it as a main course and it's a great one to impress your guests.

7. One thing we never thought of turning pumpkin into is a dip, but this recipe by Heather Christo has enlightened us on yet another use of this awesome root vegetable! White Bean Pumpkin Hummus is the perfect healthy afternoon snack.
8. Butternut Squash and Goats Cheese Ravioli, need we say more?? This autumn dish is great for all you pasta lovers out there and thanks to Half Baked Harvest you can make it at home and feel like a super chef.
9. Also pasta based but with a Greek twist, this Pumpkin, Feta and Pea Pastitsio by Souvlaki for the Soul is another one of our favourites heartwarming dishes. It's not only super yummy but it's also another great recipe for all you leftover lovers! :)
